Greek artisanal biscuits

Some “biskota” [biscuits in Greek] are crunchy and crispy, some chewier or melt in the mouth; yet all of them are favorite snacks and treats all over the world.

You can find many recipes for biscuits throughout Greece. Yet, our aim was to present a series of everyday snacks, using mainly ingredients known for their high nutritional value such as oat, nuts, dried fruits and super foods.

Most of them are made with Greek olive oil and are vegan.


ORIGIN

Inspired by the world famous Cretan diet also known as Mediterranean diet, we have created a series of biscuits of unique character, all based in nourishing ingredients.
Most of our recipes are inspired by the island of Crete, which has a long tradition in bakery products with ingredients rich in nutritional value. The local cuisine is based on the consumption of cereals, vegetables, herbs, fruits, legumes, nuts, wine, honey and olive oil.

Our biskota with tahini, cashew, peanuts and almonds are all inspired from Crete.
Our “biskota” with sesame have been created based on a brittle recipe from the Dodecanese island of Rhodes; the so called Melekouni, a sesame seed bar with honey and cinnamon.
Last but not least, the “biskota” with cranberries & pistachios are dedicated to a beloved recipe from the picturesque Argosaronic Island of Aegina, homeland of the world famous PDO Aegina shell pistachios.

Savory biscuit rolls


“Almyrà” [Greek for savory treats] come in various recipes and in many different shapes throughout Greece, since it is a custom that every housewife has her own “secret” recipe to present.

Our “almyrà” range includes 4 different flavors:

Spinach & pumpkin seeds
Paprika & chili pepper
Fennel seeds & turmeric
Οlives & coriander seeds

ORIGIN

For our “almyrà” biscuits we have been inspired by the famous pies (“pita” in Greek) of Epirus, an area located between the mountain range of Pindos and the Ionian Sea in the northwestern part of Greece.

In the past, pita was the dominant element in the nutrition of the native nomad breeders, who had to survive on a little flour and what the surrounding nature provided them. Thus, they have become very imaginative with their pies and today there are endless alternative recipes. Feta, the famous Greek PDO white cheese, was usually an integrant part of their pies.

Staying loyal to this tradition, all our “almyrà” biscuits contain Feta, enriched with Greek only herbs, spices and vegetables.

"Kourabies"

Traditional shortbread cookies

It is most likely that the word “kourabies” [kuru for dry and biye for biscuit] originates from Turkey and made its way into the Greek language during the period of the Ottoman rule.

“Kourabies” is a Greek treat that has always sweetened and adorned every festive occasion, taking up a special place at the Christmas table. As a symbol of Greek hospitality, it is also customary to welcome guests into your home by offering them a “kourabies”.

Ιn the past, women would often take part in a silent, unspoken competition in an effort to present the tastiest recipe. This explains the countless number of different versions that can be found today.

We proudly present our 4 “kourabies” versions:

ORIGIN


We have followed a family recipe based on the most famous and widespread one, that of Kavala in north-eastern Greece.

Kavala’s unique character and spectacular location, built amphitheatrically on the slopes of the Symvolo mountain range, make it one of the most picturesque cities in the country, and a bustling harbour that unites the East with the West, Europe with Asia.

Its cultural and gastronomic identity has always been highly praised. The region’s fascinating and diverse cuisine has been enriched with elements introduced by Greeks arriving in the area from Pontus (the Black Sea), Asia Minor and Cappadocia.

Local butter cookies

In Greece we name “koulouraki” all the baked treats that somebody would call cookies. They are created in many different shapes sizes and tastes.
The braided version though is considered a classic.

ORIGIN

Αll four recipes have their roots in the beautiful southern Peloponnese peninsula.

Rich in Mythology and homeland of the ancient Olympic Games, Peloponnese is definitely a land of mystery and interest.

Its diverse culinary history has been formed by the various occupants that inhabited the area: franks, ottomans and venetians.

With its mountainous interior and its deeply indented coasts, the area is blessed with climatic conditions that favor agricultural production, thus offering to the local house wives a variety of ingredients to use in their home-made “koulouraki” treats.

"Tou koutaliou"

Classic sweet preserves

“Τοu koutaliou” [by the spoon in Greek] treats are usually served “straight” in a small, glass plate with a teaspoon. Yet, in they can be enjoyed as an accompaniment to yoghurt, cheese, ice cream, tarts or as a spread.

We have created 4 fruit preserves under our “tou koutaliou” label:

ORIGIN


You can find all kinds of “tou koutaliou” treats all over the country. Yet, the picturesque, mythical mountain of Pelion could easily claim the title of “tou koutaliou best sweets”.

In Greek mythology, Mount Pelion (which took its name from the mythical king Peleus, father of Achilles) was the homeland of Chiron the Centaur, tutor of many ancient Greek heroes, such as Jason, Achilles, Theseus and Heracles. It was also on Mount Pelion, where the uninvited goddess Eris brought a golden apple with the inscription "To the Fairest" that started the dispute among the goddesses Hera, Aphrodite and Athena resulted in events leading to the Trojan War.

Pelion is famous for its traditional little grey stoned houses and paved alleys that charm in abundance, as well as for its unique landscape. It has to one side the Pagasitikos Gulf and to the other the Aegean Sea.

On this magical mountain, nature flourishes all year long, giving life to a vast variety of fruit trees, which lavishly offer their treasures to the local cuisine.
Next to our “tou koutaliou” series from Pelion, we have added a rare fruit preserve creation from Chios Mandarin. The unique mandarin variety that grows only on Chios Island is distinctive and highly aromatic. The whole island smells wonderfully when it blossoms in spring!

"Rosedes"

Authentic Greek marzipans

Almond paste sweets are another classic Greek treat.

The islands are famous for making the tastiest “Amygdalota” (Greek for almond paste treats), which they serve to guests at weddings and baptisms.

On some islands, the locals call their Amygdalota by the name “Rosedes”.

Our “rosedes” are stuffed with honey and walnuts.

ORIGIN

Our recipe comes from Kythera in southern Greece, island of heavenly Aphrodite and her consort, Eros.

Kythera is a blessed place, with unexplored aspects and richly varied landscapes.

The island’s culinary tradition is reason enough to love the island. It is a magical coexistence of the modern Greek kitchen with the old ways, which often borrows elements from the historic Venetian presence on this island.
